Garden Niçoise and Grain Salad & Great Frogs Summit Chardonnay

A fresh, garden-inspired take on the classic Niçoise, featuring crisp lettuce, tender garden green beans, juicy tomatoes, creamy potatoes, nutty farro, and an assortment of briny olives. A bright and savory Dijon-lemon dressing, lightly sweetened with maple syrup and finished with garlic, brings all the flavors together.

Paired with a lovely Chardonnay from Great Frogs Winery, the wine’s bright character complements the lemony dressing and fresh garden vegetables, while standing up beautifully to the savory olives and creamy potatoes. A simple, colorful salad made for lingering over a good glass of wine. Enjoy!

What You’ll Need

6 cups salad greens

eight small red potatoes

quartered and stand 1-lb fresh green beans, cut into 2 inch pieces and steamed

2-15 oz cans chickpeas, rinsed and drained. with a bit of olive oil lightly sautè using a pinch of garlic & onion powder, or fresh garlic.

2 cups, cherry or grape tomatoes, halved

1-1/3 cup cooked farro

1/4 cup sliced scallions, green onions

1/4 cup fresh squeezed lemon juice

2 TBSP Dijon mustard

2 tsp pure maple syrup, optional

2 cloves garlic, minced

sea salt, and freshly ground black pepper to taste.

1. For dressing, in a small bowl, whisk together, scallions, vinegar, mustard, maple syrup, and garlic. Season with salt and pepper drizzle over salads. as a quick option, use a small food prep processor this will speed up time in mincing the garlic. although add scallions afterward.

2. Divide salad greens among four dinner plates. Top with potatoes, green beans, chickpeas, tomatoes, farro, olives.
