Roasted Root Vegetable Grain Salad Paired

with

Great Frogs Cold Blooded

This entrée features a medley of roasted golden potatoes, earthy beets, and tender sweet potatoes, all perfectly seasoned with all-purpose seasoning, salt, and black pepper. Garbanzo beans roasted with a touch of maple syrup, garlic, and onion powder bring a subtle sweetness and depth of flavor. The warm, roasted vegetables and beans are served atop a bed of fresh mixed greens, accompanied by nutty wheat berries for added heartiness. On the side, warm sourdough bread with smooth olive oil for dipping completes the comforting plate.

What you’ll need

1-lb baby gold or Red Potatoes, washed and halved.

2-3 large beets, washed, peeled if desired and cut into 1/2-1” pieces

2 medium sized sweet potatoes, peeled and cut into 1/2-1” pieces.

1 can garbanzo beans, drained, rinsed and patted dry.

3-4 cups mixed greens

2 cups cooked and warm wheat berries, prepared, according to package directions.

All-purpose seasoning, such as 21-Salute, Spike, or other.

Salt & pepper

Blueberry vinaigrette or one of your choice. Optional.

Warm, crusty sourdough bread

Good quality olive oil oil

Fresh sliced tomatoes on the side

Method

Place baby potatoes and sweet potatoes into large bowl, add salt, pepper and all-purpose seasoning to taste. Toss with olive oil and place on parchment paper covered baking sheet.

Next toss prepared beets with salt, pepper, all-purpose seasoning and olive oil. Separating the beets from the potatoes prevents the beets from staining the potatoes. Place potatoes on another parchment covered baking sheet. If possible, leave room for garbanzo beans.

Now season Garbanzo beans with 2 tsp maple syrup, 1 teaspoon olive oil, a sprinkle of onion and garlic powder, salt and pepper, and a little Smokey paprika. Play garbanzo beans in one section of the same baking tray as the beets.

Roast all fruit, vegetables at 450° oven for 25 to 30 minutes or until roasted and tender. Garbanzo beans will only need 15 minutes, so place them in halfway through the roasting time.
