Savor the tender, juicy garlic and marinated chicken breast infused with a delightful stuffing of three cheeses, spinach, and onion. This entrée pairs beautifully with Great Frogs Reveille Reveille White. Serve it alongside pasta, a side salad, or green vegetables for a variety of options. Enjoy!

Ingredients

2-large chicken breast, sliced into 2 or 3 thin pieces, pounded flat. Sometimes you can purchase from the market the breast already thinly sliced.

Marinade -Mix ingredients together (below) and  put in 1-gallon ziplock or glass dish with lid. Add chicken. Marinade for 1-hr or overnight.

1-garlic, minced

3-T SP olive oil

1-tsp dried basil (optional)

Salt & pepper

Filling

1 1/2 cups, chopped spinach

One small onion, diced

Half a cup ricotta cheese

Half a cup of Parmesan cheese

Half a cup mozzarella cheese

Sprinkle of garlic powder

Sauté onion, add spinach to wilt, add cheeses garlic powder and salt and pepper to taste.

Remove chicken from marinade, discard marinade, and bag.

Place chicken breast one at a time on flat surface add several spoonfuls of filling, like a burrito and then roll it up, secure with toothpicks or skewers.

Place all stuffed chicken rolls some of in medium heat until browned on all sides, 5 min or so.

Next, place all chicken rolls in baking dish that is slightly oiled. Loosely placed a piece of foil over the top. Bake for 30-35 min @ 375 degrees.

Remove from oven and let rest five minutes, serve.
