Sirloin Steak Tips , Roasted Potato Wedges drizzled with Jalapeño Honey and Paired With Great Frogs Waterman
A simple meal is elevated by pairing it with Waterman a vintage from Great Frogs Winery. This recipe uses sirloin steak tips, served medium-rare to enhance their flavor and tenderness. A honey jalapeño glaze is drizzled on top. The steak tips and potato wedges add a slightly spicy yet delicate sweetness to this entrée. Garnished with chopped cilantro, it’s a delightful combination. 2 pounds small, sweet or Red potatoes, washed, unpeeled, cut lengthwise into 1-1/2” wedges
1/4” olive or avocado oil, divided
1-1/2 tsp garlic granulated garlic
1-1/2 tsp sea salt, divided
1/4 cup honey
1 TBSP limed juice
1 tsp cornstarch
2 lbs sirloin steak tips, trimmed and cut into 2-inch pieces
1 jalapeño, stemmed, halved, seeded and sliced thin crosswise
1/4 cup chopped cilantro
Adjust oven rack to middle position and heat oven to 450° line rimmed baking sheet with parchment paper. Tossed potatoes, 2 tablespoons oil, granulated, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in bowl. Arranged potatoes cut side down in single layer, unprepared sheet. Roast until tender and bottoms are browned, 25 to 30 minutes.
While, potatoes, roast, whisk, honey, lime juice, and cornstarch in second bowl until cornstarch is fully dissolved; set aside. Sprinkle steak tips with remaining 1 teaspoon salt and remaining half teaspoon pepper heat remaining 2 tablespoons oil in 12 inch nonstick skillet over medium high heat until just smoking that steak tips and cook until browned on all sides and meat registers 120 to 125° (for medium rare). About seven minutes. Transfer steak tips to large plate and tent with foil to stay warm.
Poor of that from skillet. Add honey mixture and jalapeño to now – empty skillet and cook over medium – low heat until mixture is thickened and jalapeño is tender, about two minutes. Drizzle steak, tips and potatoes with honey mixture and sprinkle with cilantro. Serve, Enjoy!
