Steak Crostini Paired with Great Frogs Meritage

Filet mignon crostini—a fairly simple yet elegant meal that’s delicious with Great Frogs Meritage. This crostini could easily be an appetizer, but on a larger baguette or sourdough, they can be a satisfying and delectable meal. Filet mignon takes just minutes on the grill. served with a drizzle of chimichurri sauce, a dollop of whipped Chèvre cheese and balsamic glaze if desired. Serve with your choice of vegetables, and it makes for a filling and satisfying entrée. Great Frogs Meritage pairs excellently with this entrée. Enjoy!

Fillet Mignon

chimichurri sauce

whipped goat cheese

Slices of baguette or smaller slices of sourdough

Balsamic glaze, (optional)

Chimichurri Sauce

1 cup firmly, packed, fresh flat – leaf parsley, trimmed of thick stems

3-4 garlic cloves

1 small-med shallot

1-2 TBSP fresh oregano leaves, (can substitute 2 tsp dried

1 TBSP fresh basil

1/3 cup olive oil

2 TBSP red or white wine vinegar

1/2 tsp salt

1/8 tsp ground black pepper

1/4 tsp red pepper flakes

Method

Place garlic cloves, shallot, parsley, oregano, basil, in food processor and pulse several times. Place into a bowl, add salt, pepper, red pepper flakes, vinegar and oil, stir until mixed well. serve immediately or refrigerate, remember to bring to room temperature before serving.

Steak

!-2 fillet mignon, one will be enough for six or so Crostini's.

Preheat grill, making sure the filet mignon is at room temperature before grilling. salt and pepper steak on both sides. Grill filet mignon three minutes on each side. Let rest at least 5 minutes before cutting thin slices.

While steak is resting, toast bread and whip goat cheese,( allow goat cheese to soften at room temp, then whip )

Assemble : place thin slices of steak on top of toasted sourdough, next, spoon over chimichurri sauce, add dollops of whipped goat cheese, followed by a drizzle of balsamic glaze, if using.
