Country-Style BBQ Ribs With Great Frogs Powatanikia

Slow roasted Country-Style BBQ Ribs, sweet, smoky and oh-so-tender! Country-style are used here simply for the abundance of meat on the bone, apposed to the rack of ribs so commonly prepared. Served with Red baked potato and side slaw salad. I consider this a total comfort food with a bit of an update, with Kale, cabbage, Brussel sprout slaw. Served with Great Frogs Powatanikia, a fantastic semi-dry red.

2-3 lbs package of meaty country-style pork ribs

1 white or yellow onion, sliced

BBQ sauce of your choice, ( I prefer Lillie’s Memphis Style BBQ sauce)

4-6 Red or Golden potaoes

Fresh slaw, shredded at home or from the market. kale, cabbage, Brussel sprouts.

1-2 apples, pink lady or honey crisp

Prepare meat with salt and pepper. Place in medium heated pan to sear, turning meat to sear all sides. Place in baking dish, cover and set aside. Add sliced onion to pan with meat drippings, turn down heat and stir until translucent, add to meat, cover. Place Ribs w/onions into preheated 350 degree oven for 2.5 hours until very tender. Remove from oven, pour BBQ sauce over top of ribs, just to coat. Lower oven temp to 325 and Return to oven for another 20-30 min. Remove from oven and let rest for 10 min before serving.

For the last hour of meat baking time, place potatoes in oven to bake. Prick potatoes with knife before placing in oven.

While all is baking, prepare slaw by shredding (kale, green or red cabbage and Brussel sprout), in food processor, by hand or use a packaged mix. Place in bowl and toss with salt. Mix a 3 TBSP mayo, a pinch of onion powder, 1 TBSP lemon juice, 1 TBSP maple syrup in small dish. Pour over slaw and toss until incorporated. Add Pecans, sliced or diced apple and dried cranberries.
